From October 17 until May 15, enjoy a seasonal delicacy that is only offered at Del Frisco’s Double Eagle Steak House in Philadelphia, based on availability. The crab claws are sweet, firm and succulent, not widely available, only appearing on the menus of select restaurants outside of their native Florida.
When the time comes each season, these delicious stone crab claws are flown fresh from the Florida Keys, one of the only regions where they are available. Once harvested, the claws are cooked fresh on the boat, then promptly chilled – never frozen – and then flown fresh to the restaurants. Not only is this item so special because it’s seasonal, Stone crab claws are also considered highly sustainable, as one claw is harvested from the crabs and the crab is then returned to the sea so it can regenerate the claw. Additionally, claws must be at least 2.75 inches long to be harvested and claws cannot be taken from egg-bearing females.
Regional Manager, Richie Furino recommends pairing your stone crab claw dinner with, “a Sauvignon Blanc or great little Italian white called Vermentino for its mineral-ity and salty overtones as it hails from Sardinia, an ocean climate.”
